Portillo is a collection of wines crafted by Bodegas Salentein, the first and largest winery estate established in the Uco Valley. Located within the vineyard estate at an elevation of 4,000 feet above sea level, the winery is a wholly unique gravity-flow winery, with three levels that begin underground. Gentle handling of the fruit is the guiding principle behind the levels, achieved through subtle slopes that ease into the landscape. Gravity flow avoids pumping of the fruit, which can break up the seeds and cause phenolic bitterness in the wine. This technology also reduces the risk of oxidation.
Technology and tradition combine to ensure the highest quality fruit in the creation of world-class wines. The bodega was built of the earth and in harmony with its natural surroundings. Designed to blend seamlessly and respectfully with its environment; it was constructed using an innovative Cyclopean masonry technique that employed local stones found in the thick sedimentary layers of the mountain valley.
